Mini Gouda Cheese Balls

These bite-sized mini cheese balls, coated in pecans, cranberries, and herbs, are perfect for holiday gatherings or casual entertaining.

Ingredients

  • 1 (8 oz) block cream cheese, softened
  • 4 oz mascarpone cheese, softened
  • 3 oz finely grated Roth Gouda
  • 3 oz finely grated Roth Smoked Gouda
  • Salt and pepper, to taste
  • 3/4 cup finely chopped pecans
  • 3/4 cup chopped dried cranberries
  • 1/2 cup thinly sliced chives
  • 1/4 cup finely chopped parsley

Method

  1. In a bowl, mix the softened cream cheese and mascarpone until thoroughly combined.
  2. Add the grated Gouda, smoked Gouda, and season with salt and pepper to taste. Mix well.
  3. Roll the cheese mixture into bite-sized cheese balls.
  4. On three separate plates, place chopped pecans, cranberries, and a mixture of chives and parsley.
  5. Roll 1/3 of the cheese balls in the pecans, 1/3 in the cranberries, and 1/3 in the herb mixture.
  6. Refrigerate until ready to serve.
