These bite-sized mini cheese balls, coated in pecans, cranberries, and herbs, are perfect for holiday gatherings or casual entertaining.
Ingredients
- 1 (8 oz) block cream cheese, softened
- 4 oz mascarpone cheese, softened
- 3 oz finely grated Roth Gouda
- 3 oz finely grated Roth Smoked Gouda
- Salt and pepper, to taste
- 3/4 cup finely chopped pecans
- 3/4 cup chopped dried cranberries
- 1/2 cup thinly sliced chives
- 1/4 cup finely chopped parsley
Method
- In a bowl, mix the softened cream cheese and mascarpone until thoroughly combined.
- Add the grated Gouda, smoked Gouda, and season with salt and pepper to taste. Mix well.
- Roll the cheese mixture into bite-sized cheese balls.
- On three separate plates, place chopped pecans, cranberries, and a mixture of chives and parsley.
- Roll 1/3 of the cheese balls in the pecans, 1/3 in the cranberries, and 1/3 in the herb mixture.
- Refrigerate until ready to serve.
