These homemade cheese crackers are perfectly crispy and packed with the rich flavor of Grand Cru cheese. A delightful snack for any occasion!
Ingredients
- 8 oz Roth Grand Cru cheese
- 1 cup all-purpose flour
- 4 tablespoons unsalted butter, cut into small pieces
- ¾ teaspoon salt
- 2 tablespoons cold water
Method
- In a food processor, shred the Grand Cru cheese using the grating blade. Remove the blade and cheese from the food processor.
- Replace the grating blade with the regular blade. Add the flour, butter, salt, and shredded cheese to the food processor. Pulse until the mixture resembles coarse crumbs.
- While pulsing, add the cold water one tablespoon at a time until the dough comes together.
- Remove the dough from the food processor, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Meanwhile, preheat the oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
- On a lightly floured surface, roll out the dough until it is thin (about 1/8 inch or less). Cut the dough into one-inch squares using a pastry wheel or pizza cutter. Use the tip of a chopstick or skewer to poke a hole in the center of each cracker.
- Place the crackers on the prepared baking sheet. Bake for 17 minutes or until crispy, checking at 20 minutes. The crackers should be lightly browned on the bottom and firm to the touch.
- Let the crackers cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before storing in an airtight container.
