These Turkey Taco Lettuce Wraps are a light and healthy twist on traditional tacos, filled with seasoned ground turkey and topped with fresh veggies and creamy Havarti cheese.
Ingredients
- 2 tbsp extra-virgin olive oil
- 1 small yellow onion, chopped
- 1 lb ground turkey
- 1 tsp kosher salt
- 1 tbsp tomato paste
- 1 tbsp chili powder
- 1 cup low-sodium chicken broth
- 2 heads romaine lettuce, outer leaves separated
- Shredded Roth Creamy Havarti cheese
- Chopped tomatoes
- Chopped red onion
- Chopped avocado
- Freshly chopped cilantro
Method
- Heat olive oil in a large skillet over medium-high heat. Add chopped onion and cook until softened, about 5 minutes.
- Add the ground turkey and season with salt. Cook, breaking up the meat with the side of a spoon, until the turkey is cooked through, about 4 minutes.
- Stir in the tomato paste and chili powder, cooking for 1 minute. Add the chicken broth and simmer, stirring occasionally, until the mixture thickens, about 2 minutes more.
- Double up the romaine lettuce leaves to create sturdy wraps. Divide the turkey mixture among the lettuce leaves.
- Top with shredded Creamy Havarti cheese, chopped tomatoes, red onion, avocado, and cilantro before serving.
