Grilled cheese sandwiches are ALWAYS a good idea! This smoky, super melty pimento grilled cheese contains pantry ingredients and our Creamy Havarti.

Ingredients
- 2 (6-oz) blocks Roth Creamy Havarti cheese, shredded
- 4 ounces cream cheese
- 2 tablespoons mayonnaise
- 1 chipotle pepper (canned in adobo sauce), plus 1 teaspoon adobo sauce
- 4 ounces drained pimentos
- 3 garlic cloves
- 3 hamburger pickles
- 3 to 4 tablespoons butter
- 12 slices bread
Method
- Combine cheese, cream cheese, mayonnaise, chipotle pepper, adobo sauce, pimentos, garlic, and pickles in a food processor, and give it a few pulses. You want a nice chunky texture. Don’t over pulse or the mixture will turn to mush.
- Melt 2 tablespoons butter in a wide skillet. Spoon pimento cheese on one slice of bread, and top with another slice. Place sandwiches in hot butter, and sear each sandwich for 1 to 2 minutes. You want them to cook long enough to brown the bread and get the cheese barely softened. Flip and sear another minute. Cook sandwiches in batches, being careful not to overcrowd the pan. Add more butter, when needed.
- Transfer sandwiches to a plate and let them cool for about a minute. Slice in half and serve!
