Ingredients
- 1 tablespoon oil
- 1 large onion, finely chopped
- 2 teaspoons fresh ginger, minced
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/2 cup brown sugar
- 4 cups apples, peeled and diced
- 1/2 cup apple cider, apple juice, or water
- 2 tablespoons apple cider vinegar
- Juice from one lemon
- 1/2 cup dried cranberries
Method
- Heat oil in a Dutch oven or large saucepan over medium heat.
- Saute onions for 1 to 2 minutes, or until translucent.
- Add fresh ginger, cinnamon, nutmeg, allspice, and cloves, and cook for an additional minute.
- Add brown sugar, apples, cider, apple cider vinegar, salt, and lemon juice.
- Reduce heat to low, and let the apples cook down and begin to soften for about 10 minutes.
- Use a potato masher and mash about half of the apples.
- Add dried cranberries and continue to simmer for an additional 15 to 20 minutes, or until the mixture is thick and the liquid has evaporated.
- Let cool and transfer to a jar with a tight-fitting lid.
