Ingredients
- 1 large sweet onion, thinly sliced
- 1 tablespoon olive oil
- 2 small fuji apples, cored and thinly sliced
- 1 (1-lb) box frozen cheese pierogis (or about 12 pierogis)
- 3 1/2 cups fresh spinach (about 1/2 bag)
- 1 (6-oz) block Roth Creamy Havarti cheese, shredded
- Salt and pepper
Method
- Preheat oven to 400 degrees F.
- In a large ovenproof skillet, add onions, olive oil, and a hefty pinch of salt. Cook 5 minutes. Add apples and cook about 3 minutes, or until apples begin to soften.
- Stir in frozen pierogis. Place in the oven, and bake 15 minutes.
- Remove pan from the oven. Stir in spinach and another pinch of salt. Top with shredded Havarti, and bake another 15 minutes.
- Without removing the pan from the oven, turn oven to broil and broil for 3 minutes or until the top is golden and toasted.
- Remove from oven and enjoy!
