This classic pasta salad is a crowd-pleaser with fresh vegetables, savory Roth Creamy Havarti cheese, and a tangy herb vinaigrette. Perfect for picnics, potlucks, or as a side dish for any meal.

Ingredients

  • 1 pound fusilli spiral pasta
  • 1 pint cherry tomatoes, sliced in half
  • 1 half cucumber, quartered and sliced
  • 1 bell pepper, diced
  • 1/4 red onion, sliced
  • ½ cup chopped fresh parsley
  • ¾ cup black or green olives, sliced (optional)
  • 6 ounces Roth Creamy Havarti Cheese, diced
  • ⅓ cup white wine vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon each dried dill, oregano, and garlic powder
  • 1 teaspoon kosher salt
  • ½ cup olive oil
  • Fresh ground black pepper

Method

  1. Cook the pasta according to the package instructions. Drain the pasta and rinse it under cool water until it reaches room temperature.
  2. In a large bowl, combine the cooled pasta with the cherry tomatoes, cucumber, bell pepper, red onion, parsley, olives, and diced Roth Creamy Havarti Cheese.
  3. In a small bowl, whisk together the white wine vinegar, granulated sugar, dill, oregano, garlic powder, kosher salt, and olive oil. Season with fresh ground black pepper.
  4. Pour the dressing over the pasta salad and toss until everything is well coated.
  5. Serve immediately or refrigerate for at least an hour to let the flavors meld.
