A hearty, flavorful breakfast bagel topped with creamy avocado, fresh tomato, melted Roth Havarti Cheese, a fried egg, and a touch of chipotle mayo. Bacon optional!
Ingredients
- 1 bagel, sliced and toasted
- 1/2 avocado, sliced
- 1 slice of tomato
- 2 oz Roth Havarti Cheese, shredded
- 1 egg, fried
- 1-2 slices of bacon (optional)
- 1 tbsp chipotle mayo
- Salt and pepper, to taste
Method
- Toast the bagel to your desired crispness.
- Spread chipotle mayo on both halves of the toasted bagel.
- Top the bottom half with avocado slices, then add the tomato and season with a pinch of salt and pepper.
- Place the shredded Havarti Cheese on top of the tomato, then set the bagel under the broiler or use a toaster oven to melt the cheese.
- While the cheese melts, fry the egg to your liking. Add bacon if using.
- Place the fried egg (and bacon) on top of the melted cheese and close the bagel with the top half.
