Tomato Basil Havarti Chopped Salad

A vibrant, hearty Italian-style chopped salad with fresh veggies, salami, and Roth Tomato Basil Havarti, tossed in a zesty homemade vinaigrette.

Ingredients

  • 6 cups chopped romaine lettuce
  • 1 (15 oz) can garbanzo beans, drained and rinsed
  • 1/2 cup pepperoncini
  • 1/2 cup sliced olives
  • 1 cup cherry tomatoes, sliced
  • 1/2 cup grilled artichoke hearts, chopped
  • 1/2 cup cucumber ribbons
  • 1/3 cup thinly sliced red onion
  • 4 oz sliced salami
  • 1/2 cup cubed Roth Tomato Basil Havarti
  • Salt and pepper to taste
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 large garlic clove, finely minced
  • 1 tablespoon lemon juice

Method

  1. In a large mixing bowl, combine the chopped romaine lettuce, garbanzo beans, pepperoncini, olives, cherry tomatoes, grilled artichoke hearts, cucumber ribbons, red onion, salami, and Roth Tomato Basil Havarti. Toss together gently.
  2. In a separate bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, oregano, minced garlic, lemon juice, salt, and pepper until well combined.
  3. Drizzle some of the dressing over the salad and toss to coat.
  4. Adjust seasoning with salt and pepper if needed, and serve immediately.
