Ingredients
- 6 cups chopped romaine lettuce
- 1 (15 oz) can garbanzo beans, drained and rinsed
- 1/2 cup pepperoncini
- 1/2 cup sliced olives
- 1 cup cherry tomatoes, sliced
- 1/2 cup grilled artichoke hearts, chopped
- 1/2 cup cucumber ribbons
- 1/3 cup thinly sliced red onion
- 4 oz sliced salami
- 1/2 cup cubed Roth Tomato Basil Havarti
- Salt and pepper to taste
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- 1 large garlic clove, finely minced
- 1 tablespoon lemon juice
Method
- In a large mixing bowl, combine the chopped romaine lettuce, garbanzo beans, pepperoncini, olives, cherry tomatoes, grilled artichoke hearts, cucumber ribbons, red onion, salami, and Roth Tomato Basil Havarti. Toss together gently.
- In a separate bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, oregano, minced garlic, lemon juice, salt, and pepper until well combined.
- Drizzle some of the dressing over the salad and toss to coat.
- Adjust seasoning with salt and pepper if needed, and serve immediately.
