These savory crostini feature tender slices of beef paired with rich blue cheese. Garnished with fresh thyme, they make an impressive appetizer for any occasion.

Ingredients

  • 12 slices of French baguette, cut into 1/2 inch rounds
  • 1 tbsp olive oil
  • 1/2 lb cooked beef (such as roast beef or steak), thinly sliced
  • 4 oz blue cheese, crumbled
  • Fresh thyme for garnish
  • Salt and pepper to taste

Method

  1. Preheat your oven to 400°F (200°C).
  2. Brush the baguette slices lightly with olive oil and place them on a baking sheet. Toast in the oven for 5-7 minutes, or until the slices are golden brown and crispy.
  3. Season the beef slices with salt and pepper. If necessary, heat them in a skillet over medium heat just until warmed through.
  4. Place a slice of beef on each toasted baguette round. Top with crumbled blue cheese.
  5. Return the assembled crostini to the oven for an additional 3-4 minutes, or until the cheese begins to melt.
  6. Remove from the oven and garnish with fresh thyme. Serve immediately.
