Ingredients
- 12 slices of French baguette, cut into 1/2 inch rounds
- 1 tbsp olive oil
- 1/2 lb cooked beef (such as roast beef or steak), thinly sliced
- 4 oz blue cheese, crumbled
- Fresh thyme for garnish
- Salt and pepper to taste
Method
- Preheat your oven to 400°F (200°C).
- Brush the baguette slices lightly with olive oil and place them on a baking sheet. Toast in the oven for 5-7 minutes, or until the slices are golden brown and crispy.
- Season the beef slices with salt and pepper. If necessary, heat them in a skillet over medium heat just until warmed through.
- Place a slice of beef on each toasted baguette round. Top with crumbled blue cheese.
- Return the assembled crostini to the oven for an additional 3-4 minutes, or until the cheese begins to melt.
