Caramelized Onion Dip

Whatever the celebration, Caramelized Onion Dip is the answer. Hot, bubbly and cheesy, this small-batch recipe features the rich, nutty flavor of our alpine-style Grand Cru® cheese.

Ingredients

  • 1 tablespoon butter
  • 1 large white onion, halved and thinly sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon granulated sugar
  • 1 teaspoon balsamic vinegar
  • 2 teaspoons minced garlic (or more, to taste)
  • 4 ounces cream cheese, softened to room temperature
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons milk
  • 1/4 teaspoon each black pepper & crushed red pepper
  • 1 (6-ounce) wedge Roth Grand Cru® cheese, shredded

Method

To Prep:

  1. Melt butter in a cast-iron skillet over medium heat. Add onions and sauté for 5 minutes, stirring as required.
  2. Add thyme, sugar, and continue to cook for 15-20 minutes on medium-low heat. Stir every 5 minutes, so they caramelize evenly. Turn the heat to low if they start caramelizing too fast.
  3. Add balsamic vinegar to the pan, 1⁄4 teaspoon kosher salt (omit if you used salted butter), minced garlic, and cook for 30 seconds. Remove from heat.
  4. Allow onions to cool to room temperature and refrigerate or make the dip once onions have cooled.

To Bake:

  1. Position a rack in the center of the oven to 400 degrees F.
  2. In a large bowl, combine all the ingredients, reserving 1⁄2 cup of the Grand Cru® cheese. Grease a small baking dish and transfer dip to the dish.
  3. Top with the remaining cheese, and bake for 20-25 minutes.
