Ingredients
- 1 tablespoon butter
- 1 large white onion, halved and thinly sliced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon granulated sugar
- 1 teaspoon balsamic vinegar
- 2 teaspoons minced garlic (or more, to taste)
- 4 ounces cream cheese, softened to room temperature
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons milk
- 1/4 teaspoon each black pepper & crushed red pepper
- 1 (6-ounce) wedge Roth Grand Cru® cheese, shredded
Method
To Prep:
- Melt butter in a cast-iron skillet over medium heat. Add onions and sauté for 5 minutes, stirring as required.
- Add thyme, sugar, and continue to cook for 15-20 minutes on medium-low heat. Stir every 5 minutes, so they caramelize evenly. Turn the heat to low if they start caramelizing too fast.
- Add balsamic vinegar to the pan, 1⁄4 teaspoon kosher salt (omit if you used salted butter), minced garlic, and cook for 30 seconds. Remove from heat.
- Allow onions to cool to room temperature and refrigerate or make the dip once onions have cooled.
To Bake:
- Position a rack in the center of the oven to 400 degrees F.
- In a large bowl, combine all the ingredients, reserving 1⁄2 cup of the Grand Cru® cheese. Grease a small baking dish and transfer dip to the dish.
- Top with the remaining cheese, and bake for 20-25 minutes.
